Remember, plans are just that – PLANS and not written in stone. This would be why I deviated this past week and didn’t make two of the dinners I had planned as we had too many leftovers that I didn’t want to go to waste. This week’s menu plan is happening without grocery shopping – except to pick up a few fresh produce items. It is time to use up quite a few of the items in the pantry and freezer. Also, I’m trying to cut back on our grocery bill for the month.
So here is my plan for the week:
Monday – Curried lentils and rice (loosely based on recipe found here) and sliced tomatoes
Tuesday – Herb garden slow cooker chicken with roasted sweet potatoes and green beans
Wednesday – Apple Sausage Quesadillas from No Whine with Dinner and salad
Thursday – Leftovers
Friday – Hamburgers and veggies (these are my special recipe hamburgers that I made a few weeks back and froze some for later use – I’ll share the recipe some other time!)
Saturday – evening out
Sunday – Roasted teriyaki salmon, quinoa and Asian stir-fry veggies
Sometimes doing a pantry/freezer raid can be fun to put your creativity in the kitchen to good use. Right now, mine is stocked so well that not much creativity is needed. But my husband really excels in that department. One of these days, I’m going to hold a contest between the two of us to see who can come up with the best meal using only what is on hand – kind of like our own version of Chopped!
