I can’t believe that I forgot to mention that one of the highlights to the beginning of our trip the other week was spending a few minutes in the Pike Street Market in Seattle before we boarded the cruise ship. I have only been in Seattle as a young teenager and barely remembered being in the market. What an incredible place! While Atlanta has its share of good farmers markets, nothing comes close to comparing. And we certainly don’t have anything like the fish market, except for maybe the DeKalb Farmer’s Market , if I only lived closer to it. It was terrible not to be able to buy anything and I could have spent much more time drooling over the fresh produce, but I still enjoyed looking. Here are a few photos of what I saw.

This past week, I never made the pork or the salmon. I bumped the salmon up to this week. The pork might wait for another week. Lately I never seem to make the pork dishes on my menu plan – I keep forgetting to get it out of the freezer or I have too many leftovers from another meal.
I did find two new recipes though that we all enjoyed. The first is Meal Makeover Mom’s Blueberry Banana Pancakes. So simple and delicious. My son helped me make them yesterday morning. With the cooler temperatures, I have soup on my mind. So for lunch yesterday, I made this Broccoli and Cheese Soup. I did tweak the recipe a bit, using both fresh and frozen broccoli – probably a little more called for in the recipe. I also used soy milk (fortified with DHA omega-3 fats – the healthy stuff!) rather than 2% milk, which helps give the soup a thicker texture. Also, I used reduced fat cheddar cheese (rather than Velveeta – bleh!) as well as some parmesan, which really rounded out the flavor of the soup. This is a keeper recipe and one I can see myself making often this fall. The whole family loved it.
So here is my menu plan for this week:
Monday: Grilled Salmon with Red Pepper Sauce, Quinoa and Parmesan Spinach Cakes
Tuesday: Rotisserie-Style Crockpot Chicken, Steamed Carrots and Roasted Potatoes
Wednesday: Corn and Chicken Chowder and Green Salad
Thursday: Leftovers
Friday: Cheesy Fish Sticks, Mixed Vegetables and Roasted Okra
Saturday: Evening Out
Sunday: Simple Supper (sandwiches or whatever leftover in the fridge)
I have my eye on a few other new snack recipes to try this week if I feel up to it, energy-wise. They are these No-Bake Energy Bites and Pumpkin Carrot Cake Bread. Have you found any new recipes lately that you are waiting to try?
