Happy Monday everyone! I hope you enjoyed reading Tamara’s post and menu plan from last week. I really appreciate her taking the time to fill in for me. I was actually out of town on an Alaskan cruise with my family and extended family. We had an incredible time. It was my first time going on a cruise, and it was definitely the perfect place to do it. Not to mention, it was a welcome break from the heat here in Georgia. Alaska is an amazingly beautiful place – the scenery is absolutely stunning. Here is a tease of some of what we saw:
The food on the ship was fine – there were a few standouts here and there, both good and bad! I can see how easy it is to overeat though. I did my fare share of eating, although I kept myself in check and didn’t gorge myself on the buffet or endless options of restaurants throughout the day. I did cave to my pregnant sweet tooth and enjoyed a few more pastries and desserts that normal!
I will say though that after a week I was anxious to be home again and preparing my own food. Do you get like that? I can only handle eating out or someone else’s food so much. I like to be in control of what I’m eating and how it is prepared. So with that in mind, I dove back into menu planning upon my return as well as stocking the refrigerator with plenty of fresh foods.

Monday: Beany Cheesy Zucchini Quesadillas with a Spinach and Apple Salad
Tuesday: Spaghetti with Ground Turkey Breast and Garden Vegetables
Wednesday: Leftovers
Thursday: Teriyaki and Apricot Pork Chops, Brown Rice and Steamed Broccoli
Friday: Evening Out
Saturday: Grilled Salmon with Red Pepper Sauce, Quinoa and Grilled Vegetables
Sunday: Simple Supper (sandwiches or whatever leftover in the fridge)
