I have been on quite the pumpkin kick lately. This past week alone, pumpkin ended up on our table in about 4 different ways. My family either hasn’t noticed or they like it almost as much as I do so aren’t complaining. I’m going to assume the latter!
I made a wonderful Turkey Pumpkin Chili that will be posted very soon. I followed that up with another soup, my Roasted Pumpkin, Squash and Apple Soup for this month’s Recipe Redux. I also made these yummy Spiced Pumpkin Biscuits as I needed something really good to pair with my homemade apple butter from last weekend. I used white whole wheat flour for all of the four in the recipe and they turned out great (though I did roll out the dough a little thinner than I should have).
I’ve also been making pumpkin oatmeal this week. I even tried out doing overnight oats in my slow cooker for the first time. This worked really well using steel cut oats. I put in 1 1/2 cups steel cut oats, 3 cups milk, 3 cups water, about 1 cup pumpkin puree, a few dashes of pumpkin pie spice and a splash of vanilla. Then I put it in my slow cooker for 6 1/2 hours on low (I think my slow cooker cooks quite fast on low). My slow cooker automatically turns to warm once it is finished cooking so when we got up a little while later, breakfast was served. And I have leftovers to start the week with – yay!
Of course my other favorite pumpkin indulgence is fast becoming Silk’s Pumpkin Spice soy milk. It is great in my morning cup of coffee (decaf, that is). My husband got a Keurig machine last week as a birthday present and we are loving it!

Monday: Sausage and Lentil Stew with Jalapeno Cheddar Cornbread
Tuesday: Baked Horseradish Salmon, Brown Rice and Steamed Broccoli (bumped from last week)
Wednesday: Freezer Leftovers (probably lasagna)
Thursday: Tortellini Primavera with Grapefruit Avocado Salad
Friday: Evening Out
Saturday: Homemade Pizza and Green Salad
Sunday: Simple Supper
