Menu Plan Monday–November 28


I hope everyone had an enjoyable Thanksgiving. I know I did. We had a relaxing morning and then spent the late afternoon with extended family. I didn’t stuff myself silly – just enjoyed little tastes of a bit of everything on our buffet spread. We have some excellent cooks in my family, not to mention my brother-in-law chef, who outdid himself with the turkey this year. It was the first time he has spent Thanksgiving with us in 13 years – usually he is working this day but thankfully not this year.


I did manage to make two great meals in the slow cooker this past week. The first was my Slow Cooker Chicken Sausage and Shrimp Gumbo. I used ingredients I had on hand and it turned out really well. The other surprise outstanding dish was the Slow Cooker Shredded Korean Beef Tacos, though I did use pork instead of beef as I had pork roast in the freezer that needed to be used. I did use a little less brown sugar than the recipe calls for, and I think I could use even less next time around. This dish got a huge thumbs up from my family, including my brother-in-law and his wife who had dinner with us. The leftovers were great over brown rice too.

I will say I do miss baking. There are so many things I enjoy baking this time of year and sharing with friends and family. I think that will be one of the harder things for me being on bedrest this holiday season. But it will all be worth it in the end when our little girl arrives.

Tuesday: Cheesy Meat Loaf Minis (going to adapt this for the slow cooker), Mashed Sweet Potatoes and Steamed Broccoli

Wednesday: Tilapia Tacos with Tri-Colored Slaw

Thursday: Baked Potato Soup with a Green Salad

Friday: Mother-in-law bringing dinner

Saturday: Easy Salmon Cakes with Roasted Brussels Sprouts and Apples

Sunday: Simple Supper
