Menu Plan Monday–November 21

I can’t believe this week is Thanksgiving! Wasn’t it just Halloween? And Christmas will be here before we know it. Now starts the crazy holiday season, though being on bedrest allows me to stay at home and enjoy my family! One of the bright sides, anyway. I have been able to manage using the slow cooker this past week and have planned a few for this week as well. If it is an easy dump and go type of recipe, I can generally pull it off in the morning with minimal effort.

From this past week, about half my plan made it to our table. My husband did an excellent job with the Chicken Meatball Pasta. He added spinach and peppers to the sauce to spice it up. I managed to make the Slow Cooker Beef and Vegetable Stew. I make it differently every time, and this time it had sweet potato, home canned tomatoes from my aunt, a frozen vegetable soup blend and of course, beef. We ate it over brown rice to make it a heartier meal. My mom was kind enough to make our family favorite, Sunflower Zucchini Pie, as well as supplying another few meals in the form of a Chicken Florentine Casserole – chicken, mushrooms and spinach in a creamy sauce. 

We have been blessed with so many family and friends helping us out so far, and for that, I am extremely thankful. I do not always ask for help well or accept it as graciously as I should, though I am certainly grateful. I’m working on it. My husband is wonderful and thankfully fills in for me in the role of mom very easily. My son is learning to accept that I cannot play with him the way I used to, though we have had some great cuddle sessions on the sofa. Nothing brings a smile to my face or peace to my heart like holding him in my arms.

Here is our menu plan for this week:

Monday: Slow Cooker Gumbo (creating my own recipe)

Tuesday: Coconut Chicken Fingers, Steamed Broccoli and Roasted Sweet Potatoes

Wednesday: Slow Cooker Shredded Korean Beef Tacos (though I’ll be using pork) and Shredded Cabbage

Thursday: Thanksgiving! (hoping I am able to go and celebrate with my family!)

Friday: Leftovers

Saturday: Turkey Pasta Primavera

Sunday: Simple Sunday Supper
