Menu Plan Monday–November 14

This past week I received the news that I’ve been dreading, though expecting at some point. My doctor has placed me on modified bed rest. Granted, this is not as bad ahs full bed rest and I have made it further in this pregnancy than my first one. It is just harder this time around now that I have a child and I cannot play, care or interact with him the way that I would like! Fortunately I am blessed with a remarkable husband and surrounded by wonderful family and friends. It is hard to ask for help or accept it when it is offered, though I am learning to do just that.

While I will not be in the kitchen cooking, I will continue to make my weekly meal plans. These are the things that I would like to prepare for my family if I were able. Some of these dishes might appear on our table if my husband decides to go along with my plan or my mother helps prepare our dinner that evening as she did this past week. I’m sure in the end we will be eating a variety of things and benefitting from the kindness of family and friends that will bring us food. I will be sure to share though what these are!

So here is my tentative plan for the week that will be supplemented with more vegetables and fruits at each meal:

Monday: Skillet Gnocchi with Chard and White Beans

Tuesday: Chicken Meatball Pasta with Steamed Broccoli

Wednesday: Slow Cooker Beef and Vegetable Stew

Thursday: Leftovers

Friday: Sunflower Zucchini Pie

Saturday: Chinese Stir Fry Creation (whatever my husband comes up with!)

Sunday: Ginger Spice Chicken Kebabs with Minty Cucumber Salad and Whole Wheat Naan Bread

What are your strategies for simple meals when you have to ask for help in the kitchen?
