We had a wonderful Father’s Day weekend. On Saturday we took our son to his first sporting event – an Atlanta Braves game. It was a blast, despite a rain delay. Sunday we spent with family and hosted a dinner at our house for my family. Stay tuned tomorrow for my recipe for grilled flank steak with grilled corn and peach salsa.
This past week’s menu was high on comfort foods (which I had been craving), as well as ease. Shepherd’s Pie brings back so many childhood memories for me as my grandmother used to always make this for us. Truthfully, she wasn’t much of a cook, but there were a few things she did exceptionally well: eggs, toast (yes, toast, melt in your mouth dry toast – yes, it’s possible!), Scotch shortbread and Shepherd’s Pie. Whenever we had a family dinner, she would cook a meal for the adults but always serve the children Shepherd’s Pie (which generally made the other adults jealous!). Her version was mashed potatoes mixed with shredded turkey or chicken, peas, carrots and LOTS of butter. I make mine the same, though with much less butter. I had never made it myself until this past year, for whatever reason. But my whole family loves it, especially my son.

Tuesday: Seared Salmon with Cucumber Vinaigrette, Brown Rice and Steamed Squash (bumped from last week)
Wednesday: Beef Stroganoff and Roasted Okra
Thursday: Flaky Fish Sticks from The Mom’s Guide to Meal Makeovers, Roasted Sweet Potatoes and Zucchini
Friday: Evening Out
Saturday: Chicken and Tofu Enchiladas with Green Salad (bumped from 2 weeks ago)
Sunday: Leftovers
