This past week was another crazy one where I decided some of the meals I had planned were more involved than I wanted to prepare. So I ended up simplifying and doing some quick throw together meals out of leftovers, beans, etc instead. Sometimes, you just have to simplify.
But the one hit this past week was the Thyme & Sesame Crusted Halibut. (that is my husband’s plate in the picture below – he has a large appetite!) I used snapper rather than halibut because it was on sale! Even my 2 year old loved this dish – I think the sesame seeds gave it a crunch that he could appreciate and likened it to fish sticks, though I have yet to find a fish dish my son doesn’t like.
Here is this week’s menu plan:
Monday: Honey Lentils over Brown Rice with Roasted Okra
Tuesday: Chicken and Vegetable Pesto Pasta (going to make this up as I go)
Wednesday: Shrimp and Grits (my own recipe – will post) with Grilled Veggies
Thursday: Leftover Buffet
Friday: Outdoor concert (not sure what I’m making yet but thinking a pesto pizza)
Saturday: Sweet Apple & Squash Lasagna with Spinach Salad
Sunday: Fish Sticks from The Mom’s Guide to Meal Makeovers, Green Beans and Sliced Tomato & Cucumber Salad
