I love December – it is probably one of my favorite months. And not because my birthday is this month, but I just love this time of year as winter is settling in and all of the Christmas and holiday decorations abound. We always put up our tree and decorate the weekend after Thanksgiving. I love looking over at our tree and my son is at an age where he is really enjoying it as well. We are just starting to introduce the different concepts of Christmas to him and thankfully, he hasn’t quite focused on the gift receiving part of it yet. Though I’m sure after this year, he’ll hone in on that.
Of course I’m participating in the holiday festivities from the sidelines this year as I continue to be on modified bedrest. I am managing fine though and all is well so far. I just can’t be in the kitchen near as much as I’d like. As I have said before, I am continuing to make my weekly meal plans for the benefit of my readers, family and friends, but only a few of the dishes are actually ending up on our table each week. Thankfully many family and friends have been helping us out.
From this past week’s menu, I was only able to make the Cheesy Meat Loaf Minis in my slow cooker. Rather than individual meat loaves, I did one big loaf and cooked it all day. It turned out great! I do love this recipe. I also lined my slow cooker with aluminum foil which made it easier to remove the loaf and slice it as well as make clean-up a breeze for my husband. I did make breakfast one morning this past weekend and created these fabulous Banana Coconut Pancakes.

Monday: Baked Potato Soup with a Green Salad (bumped from last week)
Tuesday: Chicken and Biscuit Pot Pie with a Spinach and Apple Salad
Wednesday: Sautéed Shrimp with Grits and Greens (an old recipe I have that I can’t find online anywhere)
Thursday: Chicken Sausage and Vegetable Pasta with Steamed Broccoli
Friday: Collard Green and Black-Eyed Pea Soup with Whole Wheat Bread
Saturday: Leftovers
Sunday: Simple Supper
