It is hard to believe that Christmas is this coming Sunday! Where has the month gone? That also means that my due date is looming closer and closer. I am both extremely excited and terrified at the same time! I am quite nervous about handling two kids, though I’m sure we’ll adjust and get the hang of it eventually. I still have quite the to do list of projects to accomplish, books to read, etc. before the baby arrives.
This past week was full of celebrations and the same will be true of this week. Two dear friends had a potluck baby shower at my house. We had a delicious vegetarian chili as our main course and a variety of appetizers and desserts as well. It was wonderful! I can’t believe that I forgot to take my camera out and get pictures of the beautiful spread. My parents took us out for my birthday another night. We also had a birthday party for my son yesterday at one of those indoor playground places and it was a blast, not to mention very low stress for us to plan! My family laughed at my snack options (popcorn, grapes and hummus with pita chips and carrots) as they said they could tell I chose the foods and not my husband. All healthy and tasty, nothing wrong with that. Though we did have cake, of course!
From this past week’s menu, the CrockPot Indian Curry was good, but not great. It needed a little something else to give it more flavor, but I haven’t decided just what more it needed, if it was more curry powder or some garam masala or another spice. I liked the recipe overall though with the chick peas and vegetables in it in addition to the chicken – I will have to play with it though.

Monday: Tasty Tofu Nuggets with Roasted Pumpkin, Squash and Apple Soup (still some left in the freezer!)
Tuesday: Turkey Kielbasa, Macaroni and Cheese and Steamed Broccoli (son’s birthday dinner)
Wednesday: Crock Pot Veggie Lasagna with a Green Salad
Thursday: Leftovers
Friday: Old Fashioned Chicken and Dumplings with Green Beans
Saturday: Garlic Roasted Salmon and Brussels Sprouts with Quinoa
Sunday: Christmas dinner with family
