Menu Plan Monday–August 8

Garden Update: Our garden is finally starting to produce tomatoes. My okra plants are getting so tall that I might need a step ladder soon to cut the okra! And our fig tree is producing an abundance of figs – I just eat them plain though I might need to invent something to do with them soon so that my husband and son will eat them (though I don’t mind having them all to myself, there are just too many!).

This past week got off course in terms of our menu so the fish sticks and the pork chops were not made once again, but I’m going to wait for another week or two before I plan them again. My husband did some cooking this past week also, which is always a welcome break for me. He makes much better Chinese food than I do!

From this past week the big hit was the Tomato Basil Risotto, which is one of my favorite dishes ever. I haven’t made it in a long time. I don’t measure the ingredients, but just make a traditional risotto, add a few diced tomatoes halfway through and then fresh basil and parmesan cheese at the end. Both my husband and my son gobbled it up.

The Banana Brownie Waffles were good. I served them with this Raspberry Sauce that added a nice color and flavor contrast to the waffles, rather than syrup. My son didn’t eat much of the waffles though I wasn’t sure if the waffles looked too different for him (the cocoa powder makes them quite dark) or if he just didn’t want waffles.

Thursday: Dinner Out for Sister’s Birthday

Friday: Salmon with Cucumber Vinaigrette, Quinoa and Oven Dried Tomatoes

Saturday: Evening Out

Sunday: Chicken Sausage Pasta with Vegetables
