Menu Plan Monday

It has been a crazy weekend with a sick little boy, so I’m behind in getting my plan together and posted. Last week’s plan had some modifications mid-week, but the biggest surprise was the Turkey Bratwurst Patties. They really did taste just like bratwurst, but without all the grease! I will definitely make these again.

This week’s plan:

Monday: Slow Cooker Maple Country Style Ribs, Baked Breaded Okra and Roasted Carrots

Tuesday: Evening Out

Wednesday: Chicken Enchiladas (though I’ll be modifying the recipe to lighten it up – stay tuned if successful) with sauteed spinach

Thursday: Leftovers

Friday: Tofu and vegetable red curry (loosely based on this recipe) with brown rice

Saturday: Udon Noodle Bowl (will make up recipe as I go)

Sunday: Flaky Fish Sticks from The Mom’s Guide to Meal Makeovers, steamed broccoli and roasted butternut squash
