This past week, I decided to experiment more with the One Pot Wonder Tomato Basil Pasta by adding great northern beans, chicken sausage and zucchini to the recipe. I also used a whole box of pasta and just upped the liquid a bit. It turned out great. I think the sausage could be left off for a vegetarian meal. I added it because I had it on hand and to entice my son, who lately has become quite picky at dinner time.
Another favorite meal from this past week was the Mediterranean Pork with Couscous. This was a delicious pork recipe that the whole family enjoyed. I ended up serving it over mashed potatoes rather than couscous. The leftovers were great over rice and in tortillas.
Here is what is on the menu for this week:
Monday: Marinated Salmon Seared in a Pepper Crust with Cucumber Vinaigrette over Rice with Broccoli
Tuesday: Homemade Pizza with a Green Salad
Wednesday: Easy Salmon Cakes (using leftover salmon from Monday) with Roasted Sweet Potatoes and Zucchini
Thursday: Slow Cooker Vegetarian Lasagna (still working on perfecting my recipe) with a Green Salad
Friday: Leftovers
Saturday: Evening Out
Sunday: Family Dinner with my In-laws
