This past week felt like one of these weeks where everything that could go wrong did. Though I feel I have no right to complain after the devastation the Northeast has been through from Hurricane Sandy. It is hard to imagine what many are still going through almost a week later.
And it is crazy weeks like this past one that I’m glad I steadfastly plan out my meals in advance every week. Even if I don’t always follow through on all the meals or in the exact order they are written, I at least have a point of reference so that I don’t have to stress over what my family will be eating for dinner. Before children it wasn’t as big of a deal, but I always want to have a good meal on the table, no matter how simple, for my son (and daughter soon enough!).

Here is what I have planned for this week with some extra fruit and garden vegetables thrown in (would you believe I just harvested a bunch of tomatoes to ripen in the window this past week?!):
Monday: Black Bean Veggie Quesadillas with Sauteed Spinach and Sliced Pineapple
Tuesday: Lemon and Herb CrockPot Roasted Chicken with Roasted Potatoes and Brussels Sprouts
Wednesday: Dinner at Church
Thursday: Chicken, Broccoli & Rice Casserole with Sliced Tomato
Friday: Cheesy Meat Loaf Minis with Mashed Potatoes and Green Beans
Saturday: Sweet Apple & Squash Lasagna with a Spinach Salad (bumped from last week)
Sunday: Simple Supper
