I hope everyone had a wonderful Thanksgiving! Our house was battling ear infections and nasty colds, but otherwise we had a fairly relaxing day with family. Unfortunately I did miss out on doing my planned 10K that morning due to all of the illnesses but it allowed more snuggle time with the kids.
My contribution to our feast was this Apple Pie (still a few apples left from our picking last month) and Pumpkin Pie (I did use fresh pumpkin I roasted that morning). Of course I forgot to take pictures! I don’t know why I can’t remember these things! I was actually convinced the apple pie was a flop as the “syrup” for the filling just didn’t seem to work right. But no one seemed to notice and I got rave reviews from all who ate it.
For whatever reason (probably due to us all being sick and lots of leftovers), I never made any of the recipes that were on my plan last week. That’s okay though, sometimes those things happen.
Here is what I have on tap this week to be supplemented with lots of fruit (clementines, pomegranate seeds, kiwi and pineapple):
Monday: Turkey Pasta Primavera
Tuesday: Chicken Fajitas with Seasoned Black Beans and Sauteed Spinach
Wednesday: Dinner at Church
Thursday: Horseradish Mustard Crusted Salmon with Roasted Brussels Sprouts and Quinoa
Friday: Slow Cooker Chicken Parmesan over Whole Grain Spaghetti with Broccoli
Saturday: Evening Out
Sunday: Mustard Maple Pork Tenderloin with Green Beans and Israeli CousCous
