Happy Memorial Day! It is hard to adequately put into words the gratitude I feel for those who have sacrificed so much to protect our country.
Last week was a whirlwind. We made a quick trip with friends to go strawberry picking at Southern Belle Farms. We had so much fun and could have easily spent a few more hours doing it. Unfortunately I came down with a nasty stomach bug two days later and my daughter followed suit. But we both recovered in time to enjoy our weekend, which we spent having as much fun together as a family as we could in addition to celebrating our wedding anniversary.
So needless to say my menu plan just didn’t happen last week. That’s okay though, that is why my plans are always flexible! This week should be much better. And to be perfectly honest, I’m not going to plan a set menu this week. I feel the need to have a pantry/freezer/refrigerator clean out cooking week. In a perfect world, I would have gone through and inventoried all that I have and plan to put into meals for the week. However, I just haven’t had the opportunity so I’m going to wing it, which I may regret later. But my “plan” is to survey the night before and make a plan for the next day. I’ll let you know how it goes!
