Menu Plan Monday – May 19

Have you ever seen a mini papaya? I picked up these cute little guys at an Asian market yesterday. I put the spoon in the picture above to give an idea of scale. While I love papaya, my husband doesn’t and my children are hit and miss with it. These little guys are perfect so none goes to waste. I got to venture into a new (to me) Asian market last night after we saw Disney on Ice. I loaded up on fresh produce, which is always so much less expensive, not to mention so much more variety, than my local grocery store. If only I lived closer.

This week is looking to be pretty crazy with events many evenings, so this is a tentative menu for me but hopefully useful for you!:

Meal 1:  Slow Cooker Maple Country Style Ribs  with Roasted Potatoes, Mushrooms and Squash

Meal 2: Turkey and Artichoke Stuffed Shells with Strawberry Spinach Salad

Meal 3: Cheesy Beany Zucchini Quesadillas with Fresh Papaya

Meal 4: Grilled Flank Steak with Grilled Corn and Peach Salsa and Freekeh and Broccoli
