Menu Plan Monday – May 12


We had a wonderful Mother’s Day. I was fortunate to be able to divide the day and spend it with both my husband’s family and my own. Above are 4 generations of my family together. I could not have asked for a better day. I am grateful for all of the women in my life who have been shining examples of love, patience and support. Not to mention, all are wonderful cooks and we always eat well!


From this past week, the Slow Cooker Honey Sesame Chicken was great. I made this last year and my family loves it. I made some tweaks to the recipe (less honey and added sesame oil) and will continue to play with it some.

Here is what is on the menu this week:

Meal 1: Lentil Sloppy Joe’s  and Honey Whole Wheat Sandwich Buns and Broccoli

Meal 2: Homemade Pizza with a Kale Salad

Meal 3: Shrimp and Grits with a Strawberry Spinach Salad

Meal 4: Crispy Oven “Fried” Chicken with Sweet Potatoes and Green Beans
