Another week, another illness. Both kids are sick though C is worse off than E this time around. I feel like we can’t catch a break around here. I’m ready for Spring to really be here and for all of these nasty bugs to go away. I’m so fortunate to have my mother-in-law available to help me with the children otherwise I wouldn’t have been able to work the past few months!
With all of the illness, my plans for dinners got derailed again. Also, I improvised a chicken slow cooker dish that turned out great. I want to play with it some more before posting but basically I combined chicken breast, plain Greek yogurt, diced tomatoes, onion and peppers in a slow cooker with some herbs then stirred in mashed avocado, lime juice, green onions and cilantro. It made fantastic soft tacos and was great over rice too.
This week’s menu will hopefully go off as planned with fresh fruit added daily:
Monday: St. Patrick’s Day leftovers
Tuesday: Lemongrass Pork over Brown Rice with Broccoli
Wednesday: Dinner at Church
Thursday: Slow Cooker Chicken Parmesan with Zucchini
Friday: Flaky Fish Sticks from The Mom’s Guide to Meal Makeovers, Roasted Sweet Potatoes and Green Beans
Saturday: Evening Out
Sunday: Simple Supper
