I am loving my pressure cooker. I made the steamed carrots this past week, and decided to do broccoli as well at the same time. I could not get over how flavorful they turned out – we ate them plain without any seasonings and didn’t even notice! I can see this becoming a favorite way to cook certain vegetables. I’m anxious to try more pressure cooker recipes in the coming weeks!
But otherwise it was another week last week that didn’t quite go as planned. So two entrees from last week’s plan have moved up to this week. I have also realized that I need to plan an extra night into the week where we either eat out or do something with leftovers other than my usual leftover night. My husband and I have no problem with leftovers, but my son is not always a big fan, depending upon what it is. I usually eat leftovers for lunch the next day, though lately we have almost had more than we can eat, and I refuse to let food go to waste. I also need to get better at re-inventing my leftovers – this is a work in progress.
Monday: Homemade Pizza and Salad
Tuesday: Pressure Cooker Ragu, Pasta and Mediterranean Vegetables
Wednesday: Leftovers
Thursday: Corned Beef, Cabbage and Potatoes
[I have never seen my son eat so hardily as he did last St. Patrick’s Day with this meal!]
Friday: Sunflower Zucchini Pie from The Mom’s Guide to Meal Makeovers and Chili-Crusted Swe et Potato Fries from No Whine with Dinner
Saturday: Evening out or leftovers
Sunday: Pinto Beans, Collard Greens and Corn Bread
