Daylight savings is such a mixed bag for me – on one hand, I love that it gets dark later, especially as T-ball season gets underway, but losing that hour of sleep is always rough. My children fared a little better with it than they have in years past, I will say. We’ll see how tomorrow goes!
From this past week, the Split Pea Soup with Red Wine and Ham is always a favorite. The leftovers made great lunches throughout the week. I also made some congee (Chinese rice porridge) for my sick son. The rest of my menu plan didn’t quite happen. We used a lot of leftovers out of the freezer instead.
I finally made it to our local farmer’s market this past weekend – first time in 2014! My children picked out tomatoes and okra to add to the vegetables for the week. We already enjoyed the okra last night – roasted of course.
Here is what is on tap for this week, plus lots of fresh fruit (strawberries, kiwi, blackberries, oranges and apples):
Monday: Salmon Burgers (premade from Costco – gotta do the convenience thing from time to time) with Roasted Brussels Sprouts
Tuesday: Taco Bar (with choice of beef & bean or fish) and a Kale Salad
Wednesday: Szechuan Green Beans and Ground Turkey with Hot and Sour Chinese Eggplant over Rice
Thursday: Leftovers
Friday: Veggie Frittata with Roasted Sweet Potatoes and Mixed Berries
Saturday: Evening Out
Sunday: Family Dinner
