Menu Plan Monday – June 9

Last week I made my first trip into Aldi. I decided to check it out, finally. I was pleasantly surprised at the number of healthful options and certainly the prices are fantastic, on average $.50 to $1 less than what I normally pay each for some items. They even had a number of organic products, including cereal, produce and soy milk. It probably isn’t somewhere I would shop regularly just because they don’t carry everything I generally buy and I don’t like making multiple stops for groceries. But it is a nice option when needing only a few items that they will likely have in stock. I will say that one drawback for me is that they only take cash or debit cards. I don’t have a debit card and generally don’t carry much cash on me for shopping trips. Fortunately that day I had enough with me to pay for my groceries!

SwissChardPeaLasagna

My favorite meal this past week was the Swiss Chard and Sweet Pea Lasagna. Even my husband really liked it though the kids not so much. Lately though they don’t seem to like any lasagna though whereas before they loved it. I will say that lately my 5 year old is starting to expand his palate and eat more vegetables again while my 2 year old is becoming increasingly picky. This phase will pass though with my youngest, and I just have to remain persistent and consistent in my offerings.

So here is what is planned for this week:

Meal 1: Garden Turkey Meatballs with Whole Wheat Spaghetti and a Caesar Salad

Meal 2: Slow Cooker Salmon Cakes with Freekeh and Green Beans

Meal 3: Lentil Tacos with a Strawberry Spinach Salad

Meal 4: Parmesan and Sage Crusted Pork Chops with Sweet Potatoes and Roasted Purple Cauliflower (my 2 year old chose it, we’ll see if she actually eats it!)
