Menu Plan Monday – June 2

I’m still in shock that it is June and summer is officially here! Not much changes with my family’s schedule but it feels like it should. I kicked it off this past weekend by cleaning out my pantry and totally reorganizing the entire thing. Which of course involved a trip to Ikea. I’m so excited about how much better organized it is and I can see everything! I had done this almost 2 years ago but wasn’t happy with the result – the containers we bought didn’t quite fit in the space well so I couldn’t easily access some food or see what all I had which led to an overstocked pantry versus a well stocked one. There is a difference!

I just love looking at it now! Maybe that makes me weird, but I’ll gladly take it over the dysfunctional system I had going previously. So what also precipitated this need to clean out this past weekend was not really setting a meal plan this past week and cooking from what I already had on hand. I still need to work down certain things so again this week I’ll be concentrating on doing it again. Though this time I have a little more of a plan, which is a good thing!

Meal 1: Slow Cooker Thai Chicken and Vegetable Curry over Brown Rice with Roasted Cauliflower and Papaya

Meal 2: Swiss Chard and Sweet Pea Lasagna with Carrots and Sliced Apples

Meal 3: Lemongrass Pork with Freekeh and Broccoli

Meal 4: Shrimp and Grits with a Strawberry Spinach Salad
