Yes, I’m procrastinating today at getting my menu plan up. I definitely have a case of the “Look, squirrel!” syndrome today. Except it was this beautiful hawk, who is one of 2 giant ones that hangs out in my yard. He landed right out the window when I happened to have my camera sitting next to me.
From this past week’s menu, the Slow Cooker Pork Chops were wonderful. I forgot how good this recipe is and everyone loved it. I ended up serving it with mashed potatoes. The leftover sauce made a great liquid base for whole wheat pearl couscous on another night. E couldn’t get enough! The Sweet Potato Veggie Burgers were also a big hit with everyone except for E. I don’t think she liked the texture.
I also spent some time in the kitchen experimenting with some new recipes. The Smoky Chili Coleslaw above I developed for Applegate Farms as a hot dog topping, though it is wonderful on its own. The recipe will be posted soon. A new family favorite may be the Breakfast Banana Bread Pudding I developed below as part of a recipe contest for the National Honey Board.
It is a busy week as we will be doing swim lessons every day after school. So dinner needs to be pre-prepped, super fast or already cooked. Here is what is on tap, plus plenty of fruit:
Monday: Applegate Beef Hot Dogs with Baked Sweet Potato and Roasted Cauliflower
Tuesday: Slow Cooker Veggie Lasagna with a Green Salad
Wednesday: Hamburger Buddy with Green Beans
Thursday: Leftovers
Friday: Evening Out
Saturday: Asian Salmon over Brown Rice with Bok Choy
Sunday: Simple Supper
