Menu Plan Monday – June 16

Biscuits

Hope everyone had a wonderful Father’s Day. We spent it with family though started the day with a special breakfast, including homemade whole wheat biscuits. Every now and again, I just love a good biscuit. This one is flaky and tender just as a biscuit should be, I’ll post the recipe soon. And it really comes together surprisingly quick with just a few ingredients.

In case you missed it, I posted a new recipe for Garden Mushroom Meatloaf. I loved how this turned out, as did my family. While I’m not usually a fan of sneaking in vegetables as the main strategy to get children to eat more, I will do it on occasion, especially when it pumps up the flavor and boosts the nutrition value – something that benefits us all.

Of course, I never made quite a few of my planned dishes this past week – too many hiccups on the home front that prevented me from cooking as much as I would have liked. So this week features again some that I didn’t get to last week. Here is what is planned:

Meal 1: Slow Cooker Salmon Cakes with Freekeh and Roasted Cauliflower

Meal 2: Szechuan Green Beans and Ground Turkey over Jasmine Rice

Meal 3: Parmesan and Sage Crusted Pork Chops with Sweet Potatoes and Broccoli

Meal 4: Lentil Tacos with a Strawberry Spinach Salad
