Menu Plan Monday – June 11

Figs are ripening!

How excited am I that my figs are ripening, as are my blueberries??!! My son loves helping me harvest the fruit. He hasn’t quite grown a love of figs yet, but I will keep trying. In the meantime, more for me! He does love blueberries though. Now if we can only keep the birds away. We decided to forego netting this year as it was such a pain to deal with. And some other creature got into my garden and has eaten the tops off my okra plants, except for one. So I may not have okra this year – at least the farmer’s market always has plenty.

We had another good week of meals that almost went exactly as planned. I ended up inviting my parents over for an impromptu dinner Friday night so scrapped the planned panini sandwich bar as my dad is not a sandwich eater. I made Meal Makeover Mom’s Corny Salmon Cakes which were perfect along with some roasted asparagus and cauliflower.

I must admit I’ve been feeling in a bit of a vegetable rut lately – we tend to eat the same ones over and over. I also rely a good bit on frozen vegetables for the ease of preparation and convenience, though with summer here I’m getting more fresh from the farmer’s market or the grocery store. What are your family’s favorite vegetables?

Monday: Sweet Potato Veggie Burgers with Sliced Avocado and Tomato on Honey Whole Wheat Sandwich Buns

Tuesday: Crock Pot Santa Fe Chicken over Brown Rice with Steamed Broccoli

Wednesday: Fish Tacos with Cole Slaw and Canteloupe

Thursday: Panini Sandwich Bar with a Green Salad

Friday: Hamburger Buddy (subbing almond milk for the sour cream) with Yellow Squash

Saturday: Evening Out

Sunday: Happy Father’s Day!
