We are enjoying our bountiful blueberry crop right now. Though E is probably enjoying the blueberries most of all. We can’t seem to pick them fast enough at times and she certainly doesn’t understand the concept of waiting until we wash them inside before digging in. With that face, it is hard to resist her!
Despite all of the rain we’ve had here in Atlanta, we had a great 4th visiting with family. We had several days of family events, which is always fun. I’m fortunate that my family all loves food and are amazing cooks. We enjoyed many fresh salads, vegetables sides, barbecued meats and homemade ice cream.
Here is what is on the menu this week:
Monday: Black Bean and Corn Quesadillas with Spinach and Fresh Peaches
Tuesday: Salmon in the Slow Cooker with Quinoa and Broccoli
Wednesday: Balsamic Chicken over Whole Grain Pasta with Zucchini
Thursday: Leftovers
Friday: Shrimp and Grits with a Green Salad
Saturday: Evening Out
Sunday: Simple Supper
