I’m so excited for the Summer Olympics! I always love watching the Olympics, summer or winter. This year was good timing so close after the end of the Tour de France, one of my other favorite sporting events to watch. What are your favorite sports to watch?
Okay, on to the food. This past week, I loved the Spicy Black Bean Burgers. Taste wise, they were great but visually they were not! So no pictures. I didn’t have enough time to freeze them according to the instructions and I think my mixture was a little too wet as well. But we all enjoyed them – even my son. The Cilantro Thai Grilled Chicken was also a big hit with the whole family. This one will definitely be going into the rotation.
My husband and I teamed up to make a wonderful pot of congee (essentially Chinese rice porridge) for an ailing family member. We cooked it overnight in the slow cooker, which worked great, not to mention made plenty for us too. It is wonderful Chinese comfort food! It will make for great lunches or side dishes for the week.
My son and I caught part of an episode of Noodle and Doodle. We had never seen the show before, but I love that they feature a children’s cooking component. The show we watched featured Tuna Toastie Kites. He was so excited to try it and we had fun making it for lunch, though we used canned salmon rather than tuna as that was what we had on hand. He mostly ate the carrot pieces as he wasn’t thrilled with the salmon melt (though normally he loves salmon), but the fun for both of us was more in the pride he took in making it with me.
Here is what I have planned for the week:
Monday: Breakfast for Dinner (maybe waffles, eggs & turkey sausage) with Sliced Cantaloupe
Tuesday: Pesto Gnocchi with White Beans, Tomatoes and Zucchini
Wednesday: Lemongrass Pork over Brown Rice with Steamed Broccoli
Thursday: Pineapple Bacon Chicken Sausage Pasta with Vegetables (interested to try this new Aidell’s flavor and throw something together)
Friday: Ginger and Cilantro Baked Tilapia (using salmon instead) with Quinoa and Yellow Squash (bumped from last week)
Saturday: Evening Out
Sunday: Simple Supper
