I hope everyone has found ways to stay cool the past few days if you are in a part of the country (which seems like most of it) experiencing record high heat right now. It has been crazy hot here in Atlanta so I have been shunning the oven and stove as much as possible. My slow cooker is getting quite the workout right now. If you missed it, I posted 2 ways to cook fish in the slow cooker yesterday. I adapted salmon cakes and a baked fish recipe for the slow cooker. I think I may do it this way from now on, regardless of the heat it turned out so well!
A new recipe from this past week, Mediterranean Chicken, was quite good. Of course I did play with it a bit to add more flavor as the original recipe is quite basic. I used Kalamata olives rather than green and added a bunch of minced garlic. In addition, in the last 30 minutes of cooking I turned the slow cooker to high and added broccoli, a few dashes of lemon juice, Italian seasonings, onion powder and garlic powder. I had intended to use fresh herbs but forgot and put in dry at the last minute – would probably have been better to have added that sooner. It still turned out quite tasty though.

Tuesday: Slow Cooker Maple Country Style Ribs (with Soy Sauce Substitute) with Baked Sweet Potatoes and Sugar Snap Peas
Wednesday: Happy 4th of July! Grilling out with friends
Thursday: Leftover Buffet
Friday: Vietnamese Ginger Scallion Fish (in the slow cooker!) with Brown Rice and Sauteed Yellow Squash and Zucchini
Saturday: Dinner Out
Sunday: Simple Supper
