Our blueberry crop hasn’t been as good this year as in year’s past due to a bad pruning job. I wasn’t responsible, that’s all I’m saying! But we are still getting a good many and my children love it. Of course, more go into the mouths during the picking than come into the house at times but that is all part of the fun of picking your own fruit. It looks like we are going to have a great crop of figs and Asian pears though, that is if the deer, birds and squirrels don’t get to them first. I’m so excited for the pears, after 5 years of waiting this will be our first crop.
This past week went well for our menu plan though I never got to the quesadillas, so they are bumped to this week. I did a lot of cooking one day to test recipes with my new business partner, Lesley Baradel, so that supplied a good many meals for us as well. I can’t wait to share more news about this new business with you all – stay tuned, we should be making an announcement soon! The Slow Cooker Maple Country Style Ribs was probably the family favorite.
Here is what is planned for this week:
Meal 1: Slow Cooker Pork Chops with Cous Cous and Roasted Butternut Squash and Eggplant
Meal 2: Marinated Salmon with Cucumber Vinaigrette over Basmati Rice with Broccoli
Meal 3: Chicken Apple Sausage Quesadillas with a Black Bean, Corn and Avocado Salad
Meal 4: Baked Omelet Roll with a Spinach Salad topped with Peaches and Blueberries
Have a wonderful week!
