Today’s post is short and sweet. I’m playing a lot of catch up right now – still – after our family vacation the other week. I feel like a dog chasing my tail – getting no where! Do you ever feel that way? But dinner and meal planning must go on, as does life.
However, I am super excited to say that I have a new niece! My little sister gave birth to her first child this past weekend. What joy it is to see her become a mother. And I’m glad that I’ve been through it twice so that I’m in a position to support her as she starts on this journey, particularly when it comes to breastfeeding. Breastfeeding was a struggle for me at times, particularly with my first and it was difficult that I didn’t have any women in my family whom I could turn to for advice. I persevered of course and got help from others, and after a few months we go the hang of it. I’m so glad though that I can be there for my sister when she needs it.
Okay, so that totally derailed my menu planning. Back to it, here is what we are having this week:
Monday: Homemade Pizza with Caesar Salad and CaraCara Oranges (my favorite – so excited back in season!!)
Tuesday: Pork and Vegetable Fried Rice with Sugar Snap Peas
Wednesday: Cheesy Fish Sticks with Roasted Sweet Potatoes
Thursday: Leftover Buffet
Friday: Chicken and Tofu Enchiladas with a Spinach Orange Salad
Saturday: Evening Out
Sunday: Simple Supper
