Menu Plan Monday – January 14

We celebrated E’s first birthday this past week. And as you can tell, she had no problem diving right into the cake. She had it smeared all over her hair, eye, face, hands, everywhere. But it was fun to watch her! She really didn’t eat that much though. What a difference a second child will make. For C, I made his cake without sugar and no eggs (since he hadn’t been exposed yet) as I did everything by the book. He was not a big eater and wouldn’t feed himself though so it wasn’t nearly as entertaining to watch. E,, on the other hand, is quite the eater and has always wanted whatever we are eating. She has pretty much had all types of food at this point so I succumbed and she got the real deal birthday cake. My family was making fun of me, noting the difference in the two cakes.

This past week’s menu plan was going well until the weekend hit and between leftovers, a big lunch I prepared for E.’s party with the family and eating out, I veered from my plan. So this week will feature some of those dishes as well as a few others. Here is what is on tap this week:

Monday: Char Siu and Vegetable Stir Fry over Brown Rice

Tuesday: Beany Cheesy Zucchini Quesadillas with Cantaloupe

Wednesday: Slow Cooker Vietnamese Pho with a Cucumber Salad and Fresh Pineapple

Thursday: Leftovers

Friday: Homemade Fish Sticks (using this Crispy Oven Fried Chicken breading) with Roasted Sweet Potatoes and Green Beans

Saturday: Evening Out

Sunday: Simple Supper (aka Clean out the Fridge)
