Menu Plan Monday – January 13

Hello 2014! Sorry for the absence last week. We were actually at Walt Disney World for a family vacation! My intention of scheduling a post to go up while we were away fell short amid other responsibilities at home and work. But we had a fabulous time at Disney – we visited both Magic Kindgom and Animal Kingdom. It was the first visit for my children and they had a blast. While I knew C would love it at 5 years old, I wasn’t sure how E would react, not quite being 2. She went crazy whenever she saw Mickey, Minnie, Donald Duck, Pluto, Goofy or Tigger. We stood in many a line so she could meet them all. Fortunately she isn’t into the princess thing yet, so we didn’t have to do those activities.

I wasn’t sure what to expect on the food front as I had heard many people say there weren’t many healthy options. Needless to say my expectations were quite low, so I was pleasantly surprised that it wasn’t as hard as I thought it might be to find good options. I saw fresh fruit stands in both parks and there was generally a good salad or other vegetable side like baby carrots most places we went. Of course the expense of it is another matter entirely. While we did have a small refrigerator in the room where we stayed, we didn’t have access to a kitchen so I didn’t really pack our own food as I saw some people doing. I did bring snacks though such as fresh fruit, KIND bars, Lara bars and baby carrots to supplement our meals. But I was happy to be home again to a home cooked meal after we got back!

Refrigerator.Clean

Coming back from vacation is also the perfect opportunity to clean out the refrigerator as it is nearly empty. I didn’t take a before shot – too embarrassed for that as my refrigerator had gotten quite bad lately. But the after shot above was beautiful – I love it and it is almost as good as having a new refrigerator. What about you – how often do you deep clean your fridge?

We are getting back into the swing of things around here this week after celebrating both my mom’s and E’s birthday this past weekend. Here is what is on our menu this week:

Monday: Poached Eggs with Spiced Lentils and Grapefruit

Tuesday: Taco Bar with an Orange Mango Salad

Wednesday: Slow Cooker Rotisserie-Style Chicken with Mashed Potatoes and Green Beans

Thursday: Leftovers

Friday: Evening Out

Saturday: Chicken Broccoli and Rice Casserole with Roasted Butternut Squash

Sunday: Simple Supper
