Menu Plan Monday – February 3

Goodbye January, and after last week’s ClusterFlake (my personal favorite term used to describe it) here in Atlanta, good riddance! What a way to end the month. Unfortunately both my husband and I (with my children, of course) got caught up in the snow jam. Fortunately for us, it could have been much worse and certainly not as bad as some of the stories coming out. I spent 4 1/2 hours in the car getting my children from school and my husband was in the traffic nightmare for over 10 hours getting home. But we all made it safely and that is what is most important. We certainly have stories to tell now because of it. And we had a ton of fun playing in the snow after the fact.

I did make a big pot of white bean, sweet potato, chicken sausage and kale soup that we ate on most of the week. It was delicious! I didn’t really write down how I made it – I’ll have to recreate it one of these days and pay more attention so I can share it. Just what we needed after our exhausting day in the car. While we were snowbound much of the week, I ended up not really following the rest of my menu plan as we were eating up much of what was on hand. But I was glad for two things: my Hot Chai Dark Chocolate Mix to make hot chocolate and the leftover chocolate chip cookie dough in my freezer that we had made for Santa. A perfect snow day treat after playing hard outside.

Also, I completely forgot when I was planning out my menu that it was Chinese New Year this past Friday! Oops. My husband brought home Chinese food for us from Atlanta’s version of China Town, which was a wonderful treat.

Here is what is on tap for this week, with lots of fresh fruit (pineapple, Cara Cara oranges, strawberries and kiwi):

Monday: Slow Cooker Chickpea and Lentil Stew with a Kale Salad

Tuesday: Garden Turkey Meatballs and Spaghetti with Broccoli

Wednesday: Shrimp and Grits with Sugar Snap Peas

Thursday: Leftovers

Friday: Evening Out

Saturday: Grilled Flank Steak with Twice Baked Potatoes and Sautéed Spinach

Sunday: Simple Supper
