Menu Plan Monday – December 3

This time of year can be challenging for keeping a menu plan going with all of the holiday activities and get togethers. But now more than any other time, menu planning is so important! It is one less stress on me when I have a plan in place that I can refer to but also flexible enough that if it all goes out the window then that is okay too.

This past week we have all continued to fight colds and illnesses at my house so some meals happened while others did not. I was excited to finally have the Slow Cooker Chicken Parmesan again as this is a family favorite. Instead of chicken though, I used thinly sliced boneless pork chops which worked really well, I just decreased the cooking time a bit.

Here is the plan for this week to be augmented with more vegetables and fresh fruit, depending upon my mood!:

Monday: Chicken Sausage and Peppers over Spaghetti with a Spinach Salad

Tuesday: Tofu and Mixed Vegetable Fried Rice

Wednesday: Dinner at Church

Thursday: Slow Cooker Vegetarian Chili with Sweet Potatoes

Friday: Garbanzo Stew with Peanut Rice and Sauteed Spinach

Saturday: Evening Out

Sunday: Neighborhood Party
