There were some slight variations in this past week’s menu plan. I made the above Pesto Gnocchi with Chicken Sausage, Onions and Peppers on Monday night. I often do a peppers and onion base with either chicken sausage or white beans over pasta with some sort of sauce. Sometimes olives and other vegetables make an appearance, depending upon what is in the refrigerator. It is one of my quick, easy go-to pasta recipes that the family loves. And E loved the gnocchi! She couldn’t get enough of it.
The Slow Cooker Vegetarian Chili with Sweet Potatoes turned out awesome. The fire roasted tomatoes really made the dish giving it a nice kick. It was a little too spicy for C and E though. My husband however thought it had a sweetness to it that I didn’t pick up on, or was at least nicely balanced by the spiciness in my opinion.
Tuesday night featured a new recipe I was testing for an upcoming blog post. I’ll give you a little tease of it:

This week is crazy and will include slow cooked meals as well as odds and ends thrown together, most likely. But I still am making a plan to see me through:

Tuesday: Slow Cooker Chicken Sausage and Shrimp Gumbo with a Spinach Pear Salad
Wednesday: Leftovers
Thursday: Garbanzo Stew with Peanut Rice and Sauteed Spinach (bumped from last week)
Friday: Roasted Salmon with Green Beans and Roasted Potatoes
Saturday: Evening Out
Sunday: Evening Out
