Menu Plan Monday – August 6

You may or may not remember that a few months ago I found a rogue tomato plant growing in my front yard. I transplanted it to my garden, not knowing exactly what I would be getting. Surprise, they are grape tomatoes! So far, these are the only tomatoes on any of my 5 plants! Looks like I’ll be harvesting tomatoes in October again….

The rest of my garden is coming along. My red bell pepper plant is doing really well, however, I’m finding I need to pick the peppers before they turn red otherwise they rot. I was so excited about the red one above until I turned it over and saw that it was completed rotted on the other side.  The cucumbers have been hit and miss – lately they are turning very yellow and misshapen on the vine. I need to investigate as to why.

My favorite meal from this past week is above. I took my Banana Coconut Pancakes and turned them into waffles. I used a whole can of coconut milk rather than also using any yogurt or other milk. I also added an extra tablespoon of honey. They were outstanding and will be made again when we have a craving for waffles. If only I could save some for freezing!

My biggest news though is that I MIGHT be able to eat soy now. For the past week or so, I have been eating food with hidden soy in the form of soybean oil and soy lecithin without incident. So Saturday night we went to a Japanese restaurant and I had some soy sauce with my sushi. So far, fingers crossed, E seems to be tolerating it without any problems. I am being cautious though about slowly reintroducing it and will not go hog wild eating it just yet.

We are doing a family staycation the next few days, but here is our plan for the week:

Monday: Evening Out

Tuesday: Evening Out

Wednesday: Pineapple Bacon Chicken Sausage Pasta with Vegetables (bumped from last week)

Thursday: Corny Salmon Cakes in the Slow Cooker with Roasted Okra and Squash

Friday: Pork Tenderloin with Seasoned Rub with Roasted Sweet Potatoes and Zucchini

Saturday: Sister’s birthday dinner

Sunday: Simple Supper
