Menu Plan Monday – August 5


It is always a good week when I get to sample new products, especially from Chobani, one of my favorite Greek yogurts! The above arrived on Friday to sample their new flavors. (Disclosure: other than the free product, I receive no compensation for mentioning Chobani – all thoughts and opinions are my own.) C and E love their yogurt, especially when I freeze the Champion yogurt tubes and eat it like a popsicle. It is also a great way to sooth a teething child! I will say the Mint and Dark Chocolate Chip bites are a perfect dessert – great balance of mint and hint of chocolate goodness to satisfy my sweet tooth.


But what really got me excited this past week was that my new set of Cutco knives arrived! I had been wanting to get new knives for the longest time and I finally did it. I had a good Chef’s and paring knife but that was it – they didn’t fill all of my cutting needs. And all of the other knives we owned were just plain crap that my husband had before we were married. It was quite an investment but I couldn’t be happier and they are well worth it! I just love how they feel in my hand. (Disclosure: I have no relationship with the company – I paid for them and just really love the knives). 

This past week was one of those weeks where the leftovers seemed to proliferate in the refrigerator. I don’t understand how that happens sometimes. And my freezers are nearly bursting (I really want to get an upright freezer!) so it wasn’t an option to save for another time. Needless to say, much of my meal plan went out the window as we got creative with what was already on hand. This really isn’t a problem for my husband or I but C and E aren’t a big fan of leftovers. E is easier to please in this department however than C.

Monday: Healthy Breaded Shrimp with Roasted Squash and Zucchini

Tuesday: Chicken Enchiladas with Salsa Verde and Broccoli

Wednesday: Slow Cooker Pork Chops  over Quinoa with Pan Fried Parmesan Brussel Sprouts

Thursday: Leftovers

Friday: Slow Cooker Vegetarian Lasagna with a Green Salad

Saturday: Evening Out

Sunday: Family Dinner
