Menu Plan Monday – August 26

Hope you all had a wonderful weekend. We spent it with friends – it was nice to entertain a bit for a change. Of course entertaining these days with children is always interesting. Luckily we had good friends (one with a child of her own, the same age as E) over who understand that the house isn’t perfect and neither will be the table, especially when children are present. I made this Pork Loin, which was outstanding. It turned out perfectly – so flavorful and moist. Both of the toddlers at the table who aren’t big meat eaters gobbled it up. I served it with whole wheat pearl couscous and roasted Brussels sprouts. My friend brought a delicious kale salad with cherries and pine nuts.  It was too crazy for me to get any pictures though.

We also are started t-ball with C. He loved it and is so excited. While I’m glad he is finally playing in a team sport that he loves, I’m not thrilled with some of the late night games and practices. I just think 7:15 is too late during the week for 4 and 5-year olds. Thank goodness I already plan my menus because it will be a challenge to get the kids from school, eat dinner and at the ballpark on time some nights. We spent forever shopping this past weekend also trying to find t-ball gear small enough for C. E managed to find some of her own too, in the picture above.

Monday: Clean out the Fridge! (swimming in leftovers, again….)

Tuesday: Slow Cooker Sesame Beef over Brown Rice with Broccoli

Wednesday: Thai Peanut Pasta with a Green Salad

Thursday: Beef tacos (using leftover meat from Tuesday)

Friday: Cheesy Fish Sticks with Roasted Potatoes and Zucchini

Saturday: Evening Out

Sunday: Simple Supper
