I have been loving our weather the past week, well the temperatures anyway, not so much the rain. It has been so nice to feel cool weather in August. We have actually been able to enjoy dinner on our porch. And I’ve taken to working outside during the day on the porch too – definitely a big bonus of working from home.
From this past week, I loved the Curried Veggie Burgers. I mixed up some plain yogurt with a little bit of lemon juice and curry powder to serve with it. I made mini sizes for “sliders” and have a bunch leftover in my freezer for meals another time. This recipe makes a ton! Also, I did something I had never done before and that was make homemade Salsa Verde, which I love. It was so simple and definitely tasty, especially on the chicken enchiladas I whipped up. Unfortunately I got really sick after dinner (unrelated to the food – medical condition I will write about another time) so I don’t think I will be able to eat it again for a long time. Ever have that happen where a favorite food or meal is ruined after getting sick after eating that food?

Tuesday: Slow Cooker Chicken a la Criolla over Brown Rice with Sliced Avocado
Wednesday: Spring Onion Casserole with a Strawberry Spinach Salad

Friday: Evening Out
Saturday: Grilled Flank Steak with Potatoes and Green Beans
Sunday: Simple Supper
