Only a few more weeks until the launch of my new business, My Menutrition, with my friend and colleague, Lesley Baradel! We are so excited to be able to offer more comprehensive menu planning tools and resources. Once we launch the new site, I will no longer be sharing my weekly menu plans here on my blog. I know I’ve teased it several times but hopefully by next Monday I can give you a sneak preview of what to expect.
In the meantime, here is what we’ll be eating at my house this week:
Meal 1: Slow Cooker Honey Mustard Pork Loin with Roasted Eggplant and a Green Salad
Meal 2: Madras Lentils over Baked Potatoes with Sauteed Spinach
Meal 3: Baked Pesto Salmon over Field Greens with Tomatoes and Cucumber
Meal 4: Tofu Green Bean Stir Fry with Brown Rice (repeat from last week that never got made!)
