We had a wonderful staycation this past week. Though I feel like I am never going to get caught up! My mind has stayed in vacation mode. We visited the Southern Museum of Civil War & Locomotive History. My son loves the “train museum” as he calls it, his favorite part being their short movie, The Great Locomotive Chase. The museum also has a wonderful children’s play area, and even an infant area where E decided she could stand.
This was one of those rare days we ate every meal out, which is easier as my dietary restrictions are easing up. The highlight though was having a date with my husband, something we have not done in a few months. We enjoyed Seed Kitchen and Bar. My favorite dish was roasted beets and grapefruit. I have finally grown a fondness for beets, particularly roasted golden beets.
We also went to Legoland for the first time. My son had a blast and it wasn’t too crowded, thank goodness. The food options were bleak, however. The one downside to such attractions is the lack of food choices and you are not allowed to bring in outside food. Is it really so difficult to have healthy options? There were a few choices that would have been okay except they contained dairy, so a hot dog was all that I could eat. I did sneak in my KIND fruit and nut bar* though to hold me over.
This week, I’m focusing on getting us all back on track, including myself. I’m entering week 4 of the Best Body Bootcamp though I hardly got in any workouts from last week. But this is a new week to start fresh! Here is what is on our menu this week:
Monday: Burrito Bar with Roasted Cauliflower and Fresh Strawberries
Tuesday: Homemade Pizza with a Green Salad and Fresh Pineapple
Wednesday: Veggie Frittata with Roasted Potatoes and Fresh Figs
Thursday: Grilled Salmon & Zucchini with Red Pepper Sauce over Quinoa
Friday: Chicken Sausage and Vegetable Pasta with Fresh Pineapple
Saturday: Evening Out
Sunday: Pad See-Ew with Cucumber Salad with Cantaloupe
