Greetings from snowy Georgia! So far I think we have almost 5 inches at our house! But as long as we keep power, my menu plan is set for the week and all groceries bought – hooray! So here is what we’ll be eating this week for dinner:
Monday: Cranberry Crockpot Chicken with Collard Greens
Tuesday: Salmon Cakes with Broccoli
Wednesday: Beany, Cheesy Quesadillas (from Meal Makeover Mom’s No Whine with Dinner) and mixed vegetables
Thursday: Turkey and Artichoke Stuffed Shells with green beans
Friday: Leftovers
Saturday: Zucchini Sunflower Pie (from Meal Makeover’s Mom first cookbook) with Spinach Salad
Sunday: Cheesy Meat Loaf Minis (from this month’s Cooking Light) with Roasted Sweet Potatoes and Sauteed Spinach
Guess I should have planned our menu according to the weather but I forgot to take that into consideration. Some chili would have gone nicely with the snow – oh well! What’s on your menu this week?
