I posted the link on Monday to my blog post over at Dr. Z and Friends about making quick meals in your own home. I have had more personal comments lately on the post and my cooking video, which is always a thrill for me. I hope to start doing this more regularly, especially after the baby comes!
in the meantime, I wanted to share some of my other favorite time saver recipes. You’ve heard me say it before, but planning is a must. Of course having a well stocked pantry helps too. Keeping a variety of frozen vegetables on hand means that I can complement the main dish in mere minutes.
- Skillet Gnocchi with Chard and White Beans (using frozen spinach in place of the chard is a big time saver)
- Slow Cooker Creamy Tacos
- Salmon with Cucumber Vinaigrette
- Slow Cooker Chicken Parmesan
- Greek Pasta with Tomatoes and White Beans
- Sunflower Zucchini Pie
- Turkey and Artichoke Stuffed Shells (I use just bottled sauce but it is good to make ahead and freeze for later, which is why it is on the list)
- Honey-Mustard Pork Tenderloin with Kale (while the pork takes a little while to cook this meal comes together really fast, serve with quick-cooking whole wheat couscous or quinoa)
Feel free to share your favorite real food, fast recipes and ideas in the comments section.
