This week I have asked my good friend and fellow dietitian, Tamara Melton, to share with us her approach to menu planning as well as her menu plan for the week.
Every week before planning our menu, I visit the website of my favorite grocery store, Publix, to see what they have on sale. Based on their selection, I plan our family’s meals for the week. It’s a challenge I look forward to because, it not only save us money, but it helps us to eat seasonally, and forces me to have variety in our meals. I’m also a HUGE fan of Cooking Light (so much so I joke that our kitchen is one of their unknown test kitchens). My family loves the taste of their recipes, and I love that they have tons of healthy options.
Here is my menu for this week:
Monday: Grilled Barbecue Chicken Pizza with side salads
Tuesday: Broiled Salmon with Caramelized Corn Saute and Steamed Broccoli
Wednesday: Date night with husband- dinner out
Thursday: Spicy Honey Brushed Chicken Breasts with Creamy Parmesan Orzo and Sauteed Spinach
Friday: Pasta tossed w/ stewed tomatoes, bell peppers, onions and spicy sausage
Saturday: Girls night out- leftovers
Sunday: Sloppy Joes with Raspberry Parfaits
Tamara Melton, MS, RD, LD is the Director of LaCarte Wellness, a full service wellness consultation firm. In addition she is the Academic Professional for the School of Health Professions at Georgia State University. In her spare time, Tamara loves to cook, practice Pilates, travel, and find new hobbies through online websites such as Groupon and Living Social.
