Menu Plan Monday–June 18

We’ve been on a family “staycation” since last Thursday and I have completely unplugged during that time. It has been a wonderful break, though I have taken peaks at my smartphone here and there to make sure I haven’t missed anything earth shattering.

We have spent time at the lake, swimming and boating, took our son to play his first game of putt putt as well as an incredible trip to the Atlanta Botanical Gardens. It has all been wonderful, but I think the botanical gardens may have been my favorite. It is a magical place with something for everyone: a unique canopy walk on a suspended bridge in the tree canopy, fountains everywhere, an edible garden and a children’s garden with water play in sprinklers. My son loved all of it, particularly the fountains and the tunnels where he could shout and hear his echo. I think next year after our baby comes we might get a family membership.

So needless to say, I am behind with my post today, but here it is nonetheless as I’m plugging back in on the last day of our vacation. Also, due to our family vacation, I ended up not cooking as much as I had planned, at my husband’s request, as he didn’t feel like cleaning the kitchen every night. While I don’t mind, he would rather me not do it since I have become pregnant – it’s a perk I’ll take!

Here is this week’s plan with a few items from last week:

Monday: Simple Supper (cooking out of the pantry) or Dinner Out (not sure yet – gotta love last night of vacation!)

Tuesday: Chicken Parmesan with Steamed Broccoli

Wednesday: Thyme & Sesame Crusted Halibut with Baked Sweet Potato and Mediterranean Vegetable Blend

Thursday: Pork Chops with Peach BBQ Sauce, Quinoa and Cheesy Spinach Bake from Meal Makeover Mom’s No Whine with Dinner

Friday: Leftovers

Saturday: Evening Out

Sunday: Thai Chicken with Coconut Rice and Steamed Broccoli, Cauliflower & Carrots
