Menu Plan Monday–July 11

This past week’s menu plan got derailed once the weekend hit, which is okay, as it was for good reasons. Friday was a stressful day, so we went out for my husband’s version of comfort food: Chinese food. The other nights we had some impromptu plans with friends, new and old as well as family over the weekend. For a cookout at my sister’s house, I took advantage of my garden bounty and made a simple salad of cucumbers, tomatoes, orange and yellow bell peppers and fresh basil splashed with balsamic vinegar, olive oil, salt and pepper. It was the perfect complement to the burgers and chicken sausages that her fiancé grilled.

The star from this past week’s menu was the Crockpot Falafel. I adore falafel and I’ve experimented with various recipes at home. This one earns top marks though in terms of ease and taste. I was really surprised at how well it turned out. Even my husband and my son liked it.

Monday: Grilled Eggplant, Zucchini & Garbanzo Bean Pasta (using this recipe as inspiration)

Tuesday: Quick Apple Chicken Sausage Quesadillas from Meal Makeover Mom’s No Whine with Dinner with Steamed Broccoli

Wednesday: Thyme & Sesame Crusted Halibut with Baked Sweet Potato and Strawberry Cucumber & Basil Salad

Thursday: Cheesy Black Bean Burgers (bumped from last week) with Roasted Okra

Friday: Pork Chops with Peach BBQ Sauce, Grilled Corn and Cheesy Spinach Bake from Meal Makeover Mom’s No Whine with Dinner

Saturday: Evening Out

Sunday: Simple Supper
