My thoughts are with those affected by Hurricane Irene. It is hard to imagine the devastating flooding in the Northeast. It was a little windy here on Saturday but unfortunately we didn’t get any rain here in Atlanta – I would have gladly taken some!

From this past week’s menu, the Slow Cooker Creamy Tacos were a hit, both in taste and ease of prep. I did add black beans, corn and orange bell pepper to the recipe. While I only had the plain Philadelphia crème rather than the Santa Fe flavored one, I added chili powder, cumin and some other spices as well as a few chopped jalapenos to spice it up. While I only used 2 large chicken breasts, it still made quite a bit for the 3 of us. I used some of the leftovers to make nachos. I even have some left that will go into the freezer for one more meal at a later time.
I also made a fabulous chocolate chip banana bread over the weekend. I used this recipe, Eileen’s Best Banana Bread, from Cooking Light though I made a few modifications. I used 3 bananas rather than 2 because I like a lot of banana flavor. I also added some vanilla, cinnamon and about a 1/2 cup of chocolate chips. It was very moist and delicious.
For this week, I will continue to cook from our freezer and pantry for the most part.

Tuesday: Skillet Gnocchi with Chard and White Beans and Green Salad
Wednesday: Chicken and Apple Sausage, Lima Beans and Mixed Vegetables
Thursday: Leftovers
Friday: Dinner at sister’s house
Saturday: Evening out
Sunday: Simple Supper (i.e., throw together whatever is in the refrigerator)
