This past week was a whirlwind, topped off by an even busier weekend. Between my 20th high school reunion (YIKES!! Really, how has it been that long??!!) and having a yard sale at my sister’s house, I was beat. Thankfully I had plenty of freezer leftovers and simple meals to make it through. I think I finally cleared out all of the leftovers from the freezer, which is a good thing as I need to make more room for other items I want to keep in the freezer.
I’m breaking out the slow cooker more this week, as it really has not been getting enough use lately. Here is this week’s menu:
Monday: Tasty Tofu Nuggets with Steamed Broccoli and Mashed Potatoes
Tuesday: Salmon in Slow Cooker with Tomatoes and Zucchini (working on a new recipe) over Quinoa with Baked Apples
Wednesday: Veggie Frittata with Roasted Sweet Potatoes and Fresh Pineapple
Thursday: Slow Cooker Turkey Pumpkin Chili with a Spinach Apple Salad
Friday: Leftovers
Saturday: Evening Out
Sunday: Simple Supper
